Hot Fudge Sauce


Pour over cake, icecream, or just your head ! This sauce is creamy, fast, and jar toppings don't even begin to compare.

In saucepan, MELT:

1/2 Stick butter
2 oz. German Chocolate Squares
1/4 oz. Unsweetened Chocolate Squares

STIR IN:

1 1/2 Cups Powdered Sugar
1/2 Cup PLUS 1/3 Cup Evaporated Milk (NOT condensed!)
Bring to a slow boil/simmer for 8 minutes
Stay nearby, whisking, till creamy and thick
Remove from stove
Stir in 3/4 tsp vanilla

Stubby Roy's Chili Dog Sauce

I named this chili dog sauce after one of our family dogs who lives with my daughter now, because for some reason, I know this would be one of his favorites. Stubby Roy is a very overweight dachshund , (alright, he's obese). He finds food no matter where you put it. Anyway, I miss him and here it is:

1 Pound Lean Ground Chuck
1 Small Onion
1 Garlic Clove
2 TBSP Oil
1/2 Cup Beef Broth
1 TBSP Kikkoman (tastes best) Soy Sauce
2 tsp Chili Powder
2 tsp Cumin
1 tsp Celery Salt
1/2 tsp Nutmeg
1/2 tsp Ginger

Sautee' onion and garlic in oil
Add beef, cook
Add spices, soy sauce and broth
Spoon onto any hotdog
Top with cheese
there is no way to describe these, so try them!

Asparagus with Bacon Parmesan Sauce


Another recipe created in the sleepless mind of Julie, and so good you will never prepare green bean casserole again! (Assuming you like asparagus, of course.) 
* 2 bunches of fresh asparagus, get the skinniest ones you can! 
Yes, they will be $8-10 for both. But you won't care!
Steam the asparagus for about 10-12 minutes. They should still be a little crisp.
Add  *1/2 package of Oscar Mayer bacon bits
While they're steaming, make the sauce. It takes about 10 minutes too.


Put *2 TBSP. Butter in a fry pan

Whisk in 1 -2 TBSP. Wondra flour (you will have perfectly lump-free gravy & sauce) 

Whisk in 1 Cup Half & Half 
Add 2 Cups shredded Parmesan (Trader Joes if you have it)
When it's thick, mix it with the asparagus & bacon.

Let's talk about sauce and gravy for a second.

Who doesn't love a real fattening vegetable recipe? Thanksgiving is coming and this year, if you never have, you are going to make the perfect gravy, no gravy packets. I was so scared to make gravy the first time, I always got the salty gravy packets, but when I made the real gravy in 1994, I felt like an idiot. It was so easy! If you have a whisk, a good sauce pan (that isn't all black & crusty,) you, too can make the perfect sauce or gravy. Did you know you can make alfredo sauce WAY better than Olive Garden? It's true. My daughter could by the time she was 12 or 13!  Photobucket
One of the best things you can do for yourself or your guests, is to make some Pillsbury garlic bread sticks and  tube french bread, and make a batch of Alfredo sauce. You can make a gallon, it won't be enough. I'm pretty starving today. I'm sitting here eating caramel apple candy corn because they only have it once a year.


Alfredo Sauce
(if anyone ordered the Lipton Herb Garlic Mix from Amazon yet, it's amazing in this too)
To make enough for 3-4 people, 
4 TBSP. Butter
Stand there the whole time!
Melt it over medium heat
Add some roasted garlic
Add chives if you have them
Add 4-6 Cups Heavy Whipping Cream
Then add a whole bunch of Parm
The canned kind is better to make this than shredded
but only use Kraft! The other parms are gross
Add about 1-2 Cups, you'll know how much




It's like how do you know when you're going to go into labor?
No one knew! I asked and asked and no one really gave me an answer.

Cheeseburger Meatloaf With Sauce


Line a cookie sheet with 8 slices of bread
(This is to soak up the meatloaf grease)
In Bowl, mix:
2 lbs Hamburger
1 Cup Sour Cream
1 Cup Crushed Garlic or Onion Crackers
Diced Green Pepper
1 Cup Cheddar Cheese
Form loaf, place on top of bread
(Nope, you don't need eggs)
Bake 375' for 70 minutes
Make sauce:
1 Can Cream of Mushroom Soup
1 Soup Can Milk
1 1/2 Cups Cheddar Cheese

Bacon and Egg Sauce


You can spoon this sauce over biscuits, english muffins, or hashbrowns. This sauce is so good anytime, and a nice change from sausage gravy.
*If you don't want to bother frying bacon, add 1 pkg Oscar Mayer Real Bacon Bits to the sauce (of course it's much better with real bacon)

10 Slices Bacon
1 Small Yellow Onion
1 Cream of Mushroom Soup
1/2 Cup Milk
6 Sliced Hardboiled Eggs (16 minutes is perfect for boiling)
2 Cups Shredded Swiss cheese

Fry bacon, sautee' onion in the bacon grease
Whisk in soup and milk
Gently stir in sliced hardboiled eggs and cheese
Chives are nice to add too
Spoon into baking dish, top with bacon crumbles
Bake 350' for 20 minutes

Homemade Enchilada Sauce

Why buy canned enchilada sauce! It makes all your Mexican dinners taste, well, canned. Try this:

Melt 4 TBSP Butter in saucepan
Add 2 Big TBSP Chili Powder
Add 2 Big TBSP Flour
1 tsp Garlic Salt
Brown, this will add flavor
Add 2 Cups Water
It will thicken quickly
(Serves 4)

Or, for a white Enchilada sauce, that is delicious with chicken enchilada's,
4 TBSP. Butter
2 Big TBSP. Flour
2 Cups Chicken Broth
6-8 oz. Philly Cream Cheese
1 pkt. dry Taco Seasoning Mix

Crunchy Thai Peanut Sauce


This peanut sauce is so yummy when served warm with chicken or steak. It takes about 3 minutes, and you can control how spicy you want it with the amount of red pepper flakes you add.

In Saucepan, whisk together:

1 can of Coco Casa cream of coconut (see pic)
1/2 cup crunchy peanut butter
1 TBSP. Kikoman Soy Sauce
a few red pepper flakes (be careful!)

Dizzy Alfredo Sauce


Do we really need a picture? As far as I'm concerned, there is nothing that DOESN'T taste good with alfredo sauce on it. Did you ever dream of making alfredo sauce as good as The Olive Garden's? If so, this is your lucky day. It is so good, you will instantly become dizzy when you taste it.

Melt 2 TBSP. butter in a saucepan
Add 3 TBSP. roasted garlic (the jar kind)
You can use a real garlic clove instead, of course
Add 2 Cups Heavy Cream
1 1/2 Cups Parmesan Cheese (Kraft Romano-Parmesan is best)
Whisk until smooth
I love to add chopped chives, but you don't have to
Whisk and simmer till thick
Serve it with bread sticks, or any kind of bread! No one cares about the bread, they just need a way to get the sauce into their mouth.

Homemade Marinara (Pizza) Sauce


This is the best sauce for pizza or any pasta dish!

1 (16 oz) Can CRUSHED Tomatoes
1 1/2 tsp Garlic flavored Olive Oil
1 Clove (or 2 TBSP minced from jar) Garlic
1 tsp Oregano
1/4 tsp Sugar
1/2 tsp salt and pepper

Simmer, covered 20 minutes or till thick

Cheddar Cream Sauce


Use this sauce with pasta, or to top sandwiches with before they go under the broiler. Also, add ham chunks to it and pour over biscuits.

Heat 2 Cups Heavy Whipping Cream in saucepan
Stir in 2 Cups Shredded Cheddar Cheese

In a measuring cup, whisk together:
3 TBSP water
3TBSP Cornstarch
Add this to cream and cheese in saucepan
Add a few dashes of red pepper flakes
