Cracker Barrel Hashbrown Casserole


If you live somewhere where they have Cracker Barrel restaurants, you will know how exciting it is to know how they make their hashbrown casserole. It is a well guarded secret, but I used to know someone on "the inside!"

1 (26 oz) Bag Frozen Country Style Hashbrowns
2 Cups Shredded Colby Cheese
1/2 Cup Minced Onion
1 Cup Milk
1/2 Cup Canned Beef Broth
2 TBSP Melted Butter, plus butter to grease your dish (another 2 TBSP)
2 tsp Garlic Powder

Preheat Oven to 425'
In large bowl, combine hashbrowns, cheese and onion
In smaller bowl, combine broth, milk, the melted butter and garlic powder
Pour over hashbrowns
Transfer to very buttery large casserole
Bake for 60 minutes at 425'

Banana Bread W/ Cinnamon Orange Butter



This is a moist, nut free bread bursting with fresh citrus flavor.

You'll need:

1 Cup Flour
2 Eggs
1 Stick Butter
1 Cup Sugar
1 tsp. baking soda
3-4 mashed ripe bananas
Mix above ingredients well, place in a greased loaf pan. Cook for 45 minutes at 325'

The Cinnamon Orange Butter:
Soften 1 stick of butter
Add lots of Cinnamon
Grate alot of orange peel (zest) into it
Refrigerate

Smokey Hollow Pound Cake


My kids made so much fun of the name of this. It is pretty corny, but this is a really moist, heavy pound cake. You can slice it, spread some lemon butter on it and broil it for about 2 minutes for breakfast. Ha! Ha! If you really did all the stuff I tell you to, we'd all be so fat! But everything I tell you, I have done.

8 oz. Pkg Cream Cheese
2 Sticks Butter
1/2 Cup Crisco Butter Flavor Shortening
6 Eggs
3 Cups Sugar
3 Cups Cake Flour
2 tsp Lemon Extract
Grated Lemon Zest
1 tsp Real Vanilla Extract

Combine cream cheese, butter, and shortening
Add sugar, then eggs, then cake flour
Beat in lemon and vanilla extracts and zest
Pour into a greased, floured 10" Tube Pan, or lg bread pan
Bake at 325' for one hour plus 15 minutes

Glaze:
1 Cup Powdered Sugar
2 TBSP fresh lemon juice
2 TBSP Milk

Iced Honeybun Cake



1 Yellow Cake Mix
4 Beaten Eggs
3/4 Cup Oil
1 Cup Brown Sugar
2 tsp Cinnamon
1/2 Cup Pecan Chips

Mix cake, eggs and oil
Pour into greased 9x13 pan
Combine brown sugar, cinnamon and pecans
Swirl into batter, Bake @ 300' for 45-55 minutes

Make Glaze:
1 Cup Powdered Sugar
2 TBSP Milk
i tsp Vanilla
Pour over warm cake
THE SMELL OF IT! You will faint.

Ham and Egg Breakfast Casserole


Bake some Pillsbury Biscuits of your choice
Hard boil and Chop 5-6 Eggs


In mixing bowl, combine:
Chopped Eggs
1 tsp Onion Powder
1 Can Cream of Chicken Soup
1/2 Cup Milk
2 Cups Shredded Swiss or Cheddar Cheese
1 Cup Chopped Ham, (or, tear some up from the deli)
Place in greased small square baking dish
Bake uncovered at 350' for 25 minutes
Serve over biscuits or hashbrowns

Bacon and Egg Sauce


You can spoon this sauce over biscuits, english muffins, or hashbrowns. This sauce is so good anytime, and a nice change from sausage gravy.
*If you don't want to bother frying bacon, add 1 pkg Oscar Mayer Real Bacon Bits to the sauce (of course it's much better with real bacon)

10 Slices Bacon
1 Small Yellow Onion
1 Cream of Mushroom Soup
1/2 Cup Milk
6 Sliced Hardboiled Eggs (16 minutes is perfect for boiling)
2 Cups Shredded Swiss cheese

Fry bacon, sautee' onion in the bacon grease
Whisk in soup and milk
Gently stir in sliced hardboiled eggs and cheese
Chives are nice to add too
Spoon into baking dish, top with bacon crumbles
Bake 350' for 20 minutes

Orange Julius


Julius Freed opened his first fresh orange juice store in 1926. People loved the frothy, fresh juice and ordered this way:
"Give me an orange, Julius."
Here is the real recipe:

(This makes one large one)
1 Cup fresh squeezed Orange Juice
1 Cup Water
2 Egg Whites
1 tsp Vanilla
1/4 Cup Sugar
1 Cup Crushed Ice

Mix in blender for exactly 1 minute.

Top Secret CINNABON Frosting Recipe


Did you ever wish you could make Cinnabons at home? You can! Just use some Pillsbury Cinnamon rolls, and make this frosting. It tastes exactly like the Cinnabon version.

1 Stick Butter
1 1/2 Cups Powdered Sugar
2 oz. Cream Cheese
1/2 tsp Vanilla
1/8 tsp Salt

Soften butter and cream cheese, and whip together with sugar and vanilla.
You can also add a good cinnamon, like Vietnamese, to the frosting.

Cherry Cream Stuffed French Toast


Okay, I know you aren't going to rise before dawn and make this every day. I used to make it on my son's birthday and serve it to him in bed. Or, you could serve it to that special man to help him fall in love with you! Yep, that still seems to be the way to their cold, dark hearts. LOL! (See Cap'n Crunch Honey Chicken) I don't usually put my recipes on that are too much trouble unless they're worth it. Oh, by the way, I'm not really laughing out loud.

8 Eggs
1/4 Cup Evaporated Milk
1 tsp Vanilla
1/2 tsp Cinnamon
1/2 tsp Nutmeg
12 Slices Dry White Bread
1- 8 oz pkg Softened Cream Cheese
1 Can Cherry Pie Filling
4-6 TBSP Butter
Powdered Sugar

Beat eggs,milk, spices
Spread each slice of bread with cream cheese
Spread 6 Slices with Cherries, almost to the edges
Cover with remaining bread, cream cheese side down (duh)
Dip in egg mixture
Cook in hot butter for about 3 minutes each side
I use lots of butter in the pan, they cook better that way
Cut them in half so whoever is eating it will see how fancy you are!
Sprinkle with powdered sugar

Amanda's Ranch Style Eggs


Amanda sent me this recipe, and I tried it this week. It really is great!

Hi, I just wanted to send you a recipe. I just made a Quicker version of "Huevos Rancheros" this morning for my husband and me. Translated to English, "Huevos Rancheros" means "Ranch Eggs". Just over easy or medium eggs with salsa on top, traditionally served with fried potatoes and refried beans on the side. Of course with some good flour tortillas to sop up all that "golden goodness" from the eggs!

Open-faced "Huevos Rancheros" sandwich
this recipe is for 2 people:

4 eggs
olive oil to fry eggs
4 slices of whole wheat bread toasted
2 ripe Haas avocados
8 slices bacon cut in half jar of favorite homemade or store-bought salsa

Cook bacon set aside, discard fat
Fry eggs to over- medium; I used a round mold,(for ease of building the sandwich later) make sure you really coat mold so eggs don't break and stick to it)

Peel and slice avocados, place in mini-food processor along with a splash of milk and whatever you want to season your avocados with. Blend till smooth and creamy. Spread the mixture on toast, lay 2 slices of bacon each piece of toast then egg. Now warm your jar of salsa without lid covered with napkin in the microwave. Just long enough to heat the salsa a little. Just pour over your open-faced sandwiches.

Overnight Deviled Ham Casserole


2 Cans Deviled Ham
12 Slices White Bread, crusts removed
6 Eggs
3 Cups Milk
1/2 Stick Butter, cut up
2-3 Cups Grated Cheddar Cheese

Spread ham on bread, cut into cubes
Put in greased 13x9 Casserole
Beat together eggs and milk, pour over bread
Sprinkle cheese and butter on top
Refrigerate Overnight
In the morning, bake 1 hour at 350'
A great Christmas morning breakfast

Christmas Morning Casserole


Now you can make breakfast on Christmas Eve! When you get up on Christmas morning with the kids, it's hard enough to make coffee. This Western Omelette Casserole is a great example of a delicious breakfast you can prepare the night before. You throw it in the crockpot, it's ready when you wake up. This is how it's like "going out to eat."

Frozen Hashbrowns (country style, 32 oz)
Cube 1 lb ham or use pieces of Deli Ham
1 Small Diced Red Onion
2 Cups Shredded Cheddar Cheese
12 Eggs
1 Cup Milk
Seasonings

Layer (1/3 each) of hash browns, ham, onions and cheese in bottome of crockpot.
Repeat 2 times
Beat together eggs, milk and seasonings
I always say chives are good
Cover, Cook on low 8-9 hours

Farmhouse Sausage Gravy


When my husband and I first started dating, he took me to the closest big city, (Kansas City, whee ha) and we went to some cool place for breakfast. I ordered sausage gravy and biscuits, and he looked so shocked. I was like, "What?" and he said "You just don't seem like the biscuits and gravy type girl." Hmmm. I still don't really know what he meant, I guess he expected me to order a fruit cup and unbuttered toast. Not only am I a gravy type girl, this is my daughter Sarah's top favorite pick for breakfast any time I am lucky enough to make it for her.

1 Roll Jimmy Dean Sausage
4 TBSP. Flour
1 Cup Milk
1 Cup Chicken Broth
Salt and Pepper
1 Tube Flaky Grand Biscuits

Cook sausage, transfer to another bowl
Save about 3 TBSP of sausage drippings in your skillet
Add flour first, use a whisk
Then add milk and chicken broth
Whisk until smooth, cook until thick
Add sausage
Add more milk if too thick
That's it!
