Brad's Taco Tot Casserole


My brother Brad is still talking about this casserole, and I haven't made it for him since 1998. He's weird that way. Well, he's weird in every way really. He's very picky, so if he likes it, I'm sure anyone will!
Ingredients:
1 pound lean Hamburger
1 pkt Taco Seasoning mix
1 Can Green Giant Mexicorn, drained
2 TBSP Butter
1 Can Nacho Cheese Soup
1 Bag Tater Tots

Heat oven to 375. Brown the ground beef and add the taco seasoning mix, and 1 Cup water.

Spoon meat mixture into (ungreased 2 qt) casserole. Sprinkle corn over meat mixture. Spread the soup over the corn.

Place tater tots in a single layer over soup. Bake 40 to 45 minutes or until potatoes are lightly browned and the mixture is bubbly.
Top with sour cream if you want

Chicken Asparagus Stuffing Bake


The first time I ever made this in 1995, it was so pretty that my daughter took a picture of it. I can't believe I found the picture, but here it is. Anyway, that was back when you took your film in to be developed, and when the ladies behind the counter gave me my pictures, they said "Oh, please tell us the recipe for whatever that is." This is seriously my number one casserole, and I have hundreds. It makes alot of dirty dishes too, and it's still worth it.

4 Cooked, Shredded Chicken Breasts
6 Hardboiled Sliced Eggs
1 Bunch Fresh Asparagus
1 Box Stovetop Herb Stuffing
1 Stick Butter
1 Small Red Onion
2 Cups Shredded Cheddar Cheese
1 Cream of Chicken Soup
1 (5 oz) Evaporated Milk
1 tsp Curry Powder
2 tsp Kikkoman Soy Sauce

Cook chicken 50 min. , shred
Boil eggs (16 minutes) peel and slice
Prepare stuffing
Steam asparagus 5 minutes

Now, make sauce:
Melt 1 stick butter in saucepan
Sautee' the chopped red onion in that
Add milk, soup, cheese, curry and soy sauce, then whisk until thick
Grease a large casserole dish
Layer chicken, egg slices, asparagus, then half the sauce
Repeat, then top with the prepared stuffing
Bake 30 minutes at 350'

My Six Favorite Potato Recipes


Quick Potato Soup

2 1/2 cups water
1 froz bag (28oz) O'Brien Potatoes
8 pieces crispy bacon
2 1/2 cups milk

Boil water
Add froz. potatoes
Simmer 15 minutes
Reduce heat & add milk and seasonings
*Don't ever let your soup boil after you add milk to it
If you have a chunk of Velveeta you should add that too.


Make Your Own Dry Potato Soup Mix
2 Cups Instant Potato Flakes
2 Cups Dry Powdered Milk
1 TBSP Chicken Bouillon
2 TBSP Dried Onion
1 small package Bacon Bits
Mix up and store in a plastic thing like Tupperware
Then, to make one bowl, you just mix 1/2 cup soup mix with 1 Cup boiling water.
*This recipe makes 7 bowls


At the risk of repeating myself, because this needs to be repeated, and you can't make the next recipe or many others without it. I implore (haha always wanted to use that word) you to get some! If they don't have it in your store, go to Amazon and buy a case of 12 boxes for $17. It will last you a year, and is  a small price to pay for something that will change your life and make everything you fix taste like you are a gourmet chef. It is one of my greatest discoveries, and has even been the reason for many of my recipes winning prizes! 


You add it to tuna as a seasoning, spaghetti sauce, pot roast, add it to softened butter and parm for the best garlic bread paste you will ever taste in your life. Then use that paste to broil a turkey sandwich on Texas Toast the next day. It's a must for all your soups and stews. Whisk it into melted butter and drizzle over your popcorn, put it in the crockpot with some frozen corn and Philly cream cheese, cut little pockets into your steaks and roasts before you cook them and fill the pockets with this. Put 1 pkt into a plastic bag with corn flake crumbs to make your own way better version of shake and bake for your chicken. You have to use it on your Thanksgiving turkey too. You will lay awake at night wondering..."How did I ever get along without this seasoning?" I know I do. Okay Potato Recipe #3:


Hot Garlic Bacon Potato Salad (Prize winner #1)
Boil 5-6 med. red or yellow potatoes

(late Saturday night LOL) But really, for this recipe you should boil the potatoes ahead of time and cool them in the fridge because then when you chop them they don't smoosh all up, you can make nice little pieces.
8 crispy bacon
1 small chopped sauteed red onion (do this while the potatoes are boiling)
2 tsp brown roasted garlic in a jar (from the produce section)
 
Natures Seasons this is the perfect seasoning. It's your salt, pepper, garlic and celery salt all rolled into one. Another "must have." (sick) 
Boil potatoes 25 minutes
Throw in 2 eggs to boil with the potatoes

Sprinkle bacon over the potatoes
In a large bowl, whisk together 1/2 of 1 pkt. of Lipton garlic herb seasoning
with 3-4 TBSP Miracle Whip (not too much, just to moisten it up)
add 2 TBSP heavy cream or half & half
Serve warm

*Fun Fact*
I HATE PICKLES. Their juice, the smell, the color, their appearance and texture sends me reeling. I'm even more repulsed by mustard, so I strictly forbid all of you from adding these 2 ingredients to any of my recipes. Okay thanks
Now, FOR THE FIRST TIME EVER, I will now offer you, my (2) loyal followers, my prize winning

Baked Potato Salad Supreme
Preheat oven to 425'
Cool them in the fridge the chop them up

Now, make the sauce:
3/4 cup sour cream
1/2 Cup Miracle Whip or mayonnaise
1 4oz Philly cream cheese, room temp.
2 TBSP dried onion flakes
2 TBSP Lipton herb garlic
8 slices crispy crumbled maple flavored bacon 
(or your own sugar plum bacon, 
and if you haven't checked that out yet, go now and make some!)


The sugar plum bacon might sound gross but I make it on Christmas morning and 4 packages of bacon isn't even enough, it's the kind of thing you think you won't like, but you can't stop yourself when you're eating it, trust me. (and I know you do) Because I would never suggest that you make anything with gross ingredients in it.
Oh the recipe was over with. You can chill it or eat it hot
Okay, now for 2 alternative side dishes, especially for Thanksgiving


You know how you never have room on Thanksgiving for both stuffing and potatoes, but you feel obligated to yourself to have both? Okay, this solves that.

Corn Bread Stuffing Potatoes
1 bag frozen hashbrowns (the country kind are good)
2 cups sour cream
1/2 cup melted butter
1/4 cup dried onion
1 can cream of celery soup
1 box Peppridge Farm corbnbread stuffing & seasoning mix
1 cup grated swiss cheese

In a large bowl, mix everything except the stuffing
The melted butter and stuffing mix is to sprinkle on top
Spread the other stuff in a greased 9x13 glass casserole
Bake 350' 40 minutes
 
Garlic Chive Potato Casserole Prize winner #2

First, cook 2 pkgs of your fave kind of instant potatoes
When they are mashed potatoes, mix them in a large bowl with 
one container of Philly whipped cream cheese with chives
1 clove chopped garlic (or the jar kind)
1 1/2 cups chive chip dip
Then get out your hammer or just put on your plastic gloves and smash up some
flavored chips like 2-3 cups
Melt 2 TBSP butter
The butter and chips are for the top
Bake in 9x13 glass casserole for 1 hr. at 350'
I'm starving now, I haven't made these for 5 years because it's so hot
in Arizona you don't think to cook, it isn't like where I used to have seasons
that reminded you of cooking certain things.








Chili Oven Hash


Put all of this in a big deep casserole
or other large deep baking pan:

Cook 2 Pounds Ground Sirloin
Add: 1 (8 oz.) Can Diced Tomatoes
1 Pkg Chili-O Mix
Diced (boiled) Potatoes & Carrots
Diced Onion & Celery
Pour 4 Cups Tomato Juice Over the top
Bake, covered, at 350' for 2 hours

Garlic New Potato Casserole


These are really "fancy" scalloped potatoes, almost too pretty to eat
*They are worth the trouble*
2 lbs. Tiny New Potatoes, sliced
1/2 Cup Diced Red Onion
3 Cloves Minced Garlic (or use 2 TBSP of the jar kind)
3 TBSP Butter
3 TBSP Flour
1 1/2 tsp dried,crushed Rosemary
1 3/4 Cup Milk
1 Small red Pepper, cut into matchstick strips
2 Cups White Cheddar Cheese
1/2 Cup Fine Bread Crumbs

Preheat Oven 375'
Grease 2 QT Baking dish
In lg saucepan, boil potatoes for 5 minutes until just tender
Drain potatoes and transfer to lg mixing bowl
In same saucepan, cook onion and garlic in butter
Whisk in flour, rosemary, then milk
Cook until thick and bubbly
Add red pepper to potatoes
Pour sauce over potatoes and stir gently
Transfer to greased baking dish
Top with cheese
Melt 1 TBSP Butter, mix with bread crumbs
Sprinkle on top of cheese
Bake 25-30 minutes 375'

Chili Pepperoni Bake


This is a really interesting casserole, and just the right amount of "spicy."
You'll need:

1 package of linguini noodles (I recommend this type noodle because the sauce sticks to them.)
About 30-40 Hormel pepperoni's
1 Lg Can CRUSHED tomatoes
1 pkt. Chili-O seasoning
1 (8 oz.) can tomato sauce (get the chili flavored sauce if you can)
4-6 slices of American cheese
Parmesan cheese

Cook the linguine, drain
Butter a large (square or round) casserole dish
Pour the 8 oz can of tomato sauce in a small bowl and whisk the pkt. of chili seasoning into it

Put the drained linguine in the casserole dish, mix in the seasoned tomato sauce, broken cheese, and pepperoni's
Mix in half the crushed tomatoes, and some Parmesan.

Top with the rest of the crushed tomatoes, and more cheese, any kind you want.

Bake at 375' for 45 minutes.

Chicken Enchilada Parmesan Bake


4 Cooked, shredded chicken breasts
1 Small Yellow Onion
1 Pkg Yellow or White CORN Shells
1 (4oz small) Philly Cream Cheese
2 Cups Shredded Cheddar Cheese
1 Pkt. Taco Seasoning
4 TBSP Butter
1/4 Cup Flour
3 Cups Milk
1 Cup Parmesan
Sour Cream and lettuce shreds

You will want some disposable gloves for this one
Sautee the diced onion in 2 TBSP Butter with shredded chicken
Sprinkle with 1/2 the seasoning, add 1/2 Cup Cheddar, set aside
Thats your shell mixture.
The cheese helps it stay together
For your sauce:
Melt 2 TBSP Butter
Add flour, whisk
Add milk and softened cream cheese
When smooth, add the other 1/2 of taco seasoning

Put on your gloves
Carefully dip shells in sauce on both sides
Fill with chicken mixture, roll
Put face down in long greased casserole
Pour remaining sauce over top
Sprinkle with parmesan cheese
Bake at 375' 30 minutes
Top with lettuce shreds and sour cream

Frito Chili Pie


I first tasted these at some restaurant in Denver. It tastes like a melted taco in a bowl.

1 lb. Hamburger
1 Small Yellow Onion
16 oz Can Tomato Sauce (Hunts Chili Flavor if you can)
1 Pkt Chili- O Seasoning
1 Cup Water
1 Cup Shredded Cheddar
1 Cup Shredded Mozzarella
Green Onions
6 Cups Crushed Fritos (You don't have to crush them)

Cook hamburger and onion, drain
Add tomato sauce, chili seasoning and water
Layer hamburger mixture, cheese layers and corn chips in greased 2 Qt Casserole
Repeat, end with corn chips and green onions
Bake at 350' for 20 minutes
Top with sour cream and lettuce shreds

Crunchy Chicken Asparagus Casserole


This is one of those recipes I made up when I couldn't sleep because I was starving. Those are some of the best ones!

First, cook 3-4 Chicken Breasts for 45 min., dice
Steam (fresh or frozen tips) Asparagus 5 minutes
Heat oven 400'
Grease a 2 Qt Casserole

Now you can make your sauce:
In saucepan, melt 1/4 Cup Butter
Whisk in 1/3 Cup Flour
1 tsp thyme (this gives it a "chicken pot pie" taste)
Quickly add 2 1/2 Cups Half and Half
Stir in chicken and asparagus tips
Pour into casserole

The Topping:
In bowl, use fork to mix:
1 Cup Flour
1/2 Cup Parmesan Cheese
1/3 Cup (Cut Up) Butter
1/4 tsp Baking Powder
Mix till crumbly
Add 1 Beaten Egg
Put on top of filling
Bake 30 min at 400'

Potato and Gravy Casserole


This is the casserole I made all the time when I was first learning to cook. It is so easy and good. People always say that, "oh this is delicious." They'll say it about any recipe! I'm so tired of that, so I hate saying it myself. I won't put a recipe on here that isn't good, or that I haven't made more than once. Everyone's tastes are different, of course. But I feel like you can tell if you'll like something by reading the ingredients.

For instance, I wouldn't even consider eating anything with mustard, mushrooms, pickles, or olives in it. I know I don't like those things! I've tasted mustard by accident many times (thanks, McDonalds) and I've smelled pickles..UGH. The texture of a slimy mushroom sends me reeling! That's why you will not find these ingredients in any of my recipes. I also hate when a recipe says to add "mixed vegetables." Gross! Vegetables were meant to be eaten 1 at a time. I only like asparagus, green beans and corn, but not canned! (I know, nobody asked)

4 Cups Frozen(Thawed) Diced Hashbrowns
1 lb Hamburger
1 Cup Water
1 pkg Brown Gravy Mix (Knorr is best)
1 tsp Garlic Salt
3 TBSP Oil
2 Cups Shredded Cheddar Cheese
1 Can French Fried Onions (French's)

Preheat Oven to 400'
Combine potatoes and oil, and press into bottom and up sides of 8x12 baking dish
Bake for 15 minutes
While it's baking, cook hamburger, drain
Whisk your gravy packet into 1 Cup Water (I use a measuring cup)
Stir this into the hamburger, add garlic salt
Remove from heat and stir in 1/2 the cheese and 1/2 the onions
Spoon into hot potato shell
Reduce Oven to 350'
Bake 15 more minutes
Top with the rest of cheese and onions, bake 5-7 more minutes

Cheddar Chicken Brocolli Bake


This is the first thing I ever learned how to make, and it's so good I still make it.

Cook 3-4 Chicken Breasts for 45 minutes @ 350', Cut into pieces
Steam 1 frozen pkg Chopped Broccoli
Now you're ready to make the casserole
Grease a 2 Qt Round Casserole dish

Make sauce:
2 TBSP Butter
Whisk in 2 TBSP Flour
Add 2 Cups Milk
Add 2 Cups Shredded Cheddar Cheese
Add Chicken pieces and broccoli to sauce
Pour into dish

With a pizza cutter, make skinny strips out of
1 Tube Crescent Rolls, and lay them on top
You can lay them any way you want if you don't know how to do a lattice top, which is just under and over
.
Brush your strips with melted butter and bake
350' for 35 minutes till brown

Cheesy Tuna and Brocolli Macaroni


1 Pkg (7 oz) Elbow Macaroni
1 Pkg White Albacore Tuna in Water
1 Can Chicken Broth (13 oz)
Velveeta Cheese, 12 oz, cut up
1 Pkg Frozen Chopped Brocolli (10 oz)

Boil broth, cook macaroni in broth, covered for 10 minutes
Don't drain
Add Velveeta and thawed brocolli
Spoon into buttered casserole dish
Top with buttered onion cracker crumbs
Bake 325' for 30 minutes

Cracker topping:
Get out your hammer!
Put onion crackers in plastic bag, crush
Mix them with 2 TBSP Melted Butter (1 sleeve crackers)

Baked Mexican Goulash



1 lb Hamburger
1 lb Italian Sausage
1 Diced Red Onion
2 TBSP minced Garlic
Brown meat with onion and garlic
Drain
Add:
1 16 oz Crushed Tomatoes
1 Box Penne Noodles (Cooked and drained)
1 Cup Water
1 pkt Chili-O Seasoning
2 Cups Crushed Flavored Doritos
Bake 350' for 35 minutes
Add more crushed doritos to top
Bake 5 minutes more

Brocolli & Cream Cheese Pastry Pie



1/2 cup PHILADELPHIA Chive & Onion Cream Cheese Spread
1 can cheddar cheese soup
1/2 cup water
2 (16 ounce) packages frozen broccoli thawed, drained
1 cup Shredded Cheddar Cheese
1/2 (17.3 ounce) package thawed frozen puff pastry sheets
1 egg, lightly beaten


Preheat oven to 400'. Mix cream cheese spread, soup and water until well blended. Stir in broccoli and Cheddar cheese. Spoon into 2-1/2- to 3-qt. shallow rectangular or oval baking dish.

Roll pastry sheet on lightly floured surface to fit baking dish. Cover dish completely with pastry. Press pastry edges against rim of dish to seal. Brush entire surface lightly with egg; pierce with knife five to six times to vent.
Bake 30 min. until pastry is puffed and golden brown.
